Summary of Position:
The Chart Room Restaurant anchors Land's End's reputation as one of Alaska's highest quality destination resort hotels.
This position seeks to build upon this legacy.
The Director of F & B Operations directs and coordinates all activities within the Chart Room front of the house.
The Director hires AM and PM management and supervisory staff and ensures they are properly trained and supported in all Front of the House (FOH) operations.
The position works closely with the GM and Chef to coordinate seasonal menus, to implement service standards for Banquets and Special Events--and to work as part of a team with other Land's End managers and staff to ensure the complete guest experience is exceptional.
Essential Functions:
Monitor floor activity at all points of service to ensure quality control over service and cuisine Assist HR recruit and hire qualified personnel in conformity with LEAC hiring guidelines.
Conduct annual reviews of all restaurant employees.
Create or review weekly staffing schedules for conformity to approved labor budgets.
Perform daily and weekly review of timesheets to control labor cost.
Communicate and enforce company policies and procedures to all restaurant personnel.
Maintain effective training program for all staff.
Encourage internal development and advancement.
Order alcohol and perform monthly inventory (bottle counts) of all alcoholic beverages.
Order supplies such as linens; bar supplies; coffee, juices and mixes; glassware and flatware.
Assist Executive Chef in monitoring overall internal customer-friendly interactions among staff.
Ensure compliance with all federal, state and local food service and labor laws.
Assume lead role with respect to guests concerns and problems.
Required Knowledge, Skills, and Abilities:
Ability to perform all job descriptions within the Department, if required.
Knowledge of fine dining service sequence, and of inventory management principles; Ability to forecast inventory and staffing needs.
Knowledge of state DEC regulations.
Must possess food handler's card.

Effective written and oral communication skills.
Physically able to stand for 8 hours and ability to lift 40 pounds.
